Sausage and Bean Soup

  1. Bring water and beans to a boil for two minutes, remove and let stand for one hour.
  2. In a 5 to 6 quart kettle, melt butter, cook onions, onion tops, celery and carrots until the onion is soft.
  3. Mix in parsley, broth, beans and liquid, potatoes, and thyme.
  4. Bring to a boil.
  5. Cover and simmer until beans are tender about 2 1/2 hours.
  6. Add sausage slice.
  7. Cover and simmer 20 minutes.
  8. Add salt and pepper to taste.
