Sweet and Sour Apple and Daikon Radish Namasu

  1. Put the ingredients into a small pot.
  2. Bring to a boil and then let it cool.
  3. Depending on the thickness of your peeled daikon radish, cut it into half-moon shaped pieces or quarter rounds.
  4. Mix with the salt to remove water and bitterness.
  5. After letting it sit for a while, water should start coming out of the daikon radish.
  6. Squeeze it tightly with both hands to squeeze out the liquid.
  7. Use the apple as-is without peeling it.
  8. Just remove the core.
  9. Slice the apple into slices that are the same size as the daikon radish slices.
  10. Add the daikon radish and the apple to the cooled mixture from step 1 and mix to combine.
