German Pancakes
- 3 eggs
- 12 cup low-fat milk
- 12 cup flour
- 1 pinch salt
- 2 tablespoons butter, melted
- syrup (optional) or butter (optional) or powdered sugar (optional) or fruit (optional) or cooked sausage (optional) or jam (optional)
- Preheat oven to 450* F. Spray a glass pie plate with nonstick spray and rub it with a paper towel to coat well.
- Spray and rub a second time (this makes it release much better).
- Beat the eggs in a batter bowl.
- In a small bowl, combine flour and salt; add to eggs in 4 additions, mixing well after each.
- Add milk in 2 additions, stirring after each.
- Note: don't beat too hard or use a whisk--too much beating or incorporating too much air will prevent it turning out well.
- Stir in butter; pour into pie plate.
- Place in center of oven and bake at 450* F for 10 minutes.
- Turn temperature down to 350* F and bake an additional 20 minutes.
- Remove from oven; cut into wedges and serve hot with desired accompaniments.
