German Pancakes

  1. Preheat oven to 450* F. Spray a glass pie plate with nonstick spray and rub it with a paper towel to coat well.
  2. Spray and rub a second time (this makes it release much better).
  3. Beat the eggs in a batter bowl.
  4. In a small bowl, combine flour and salt; add to eggs in 4 additions, mixing well after each.
  5. Add milk in 2 additions, stirring after each.
  6. Note: don't beat too hard or use a whisk--too much beating or incorporating too much air will prevent it turning out well.
  7. Stir in butter; pour into pie plate.
  8. Place in center of oven and bake at 450* F for 10 minutes.
  9. Turn temperature down to 350* F and bake an additional 20 minutes.
  10. Remove from oven; cut into wedges and serve hot with desired accompaniments.
