Spanakopeta (Spinach Pie)
- 2 1/2 lb. spinach or 2 pkg. frozen chopped spinach
- 2 bunches scallions or 6 green onions (white only)
- 1/2 c. chopped parsley
- 1/2 tsp. dill
- 1 lb. Feta cheese
- 8 eggs
- olive oil
- oregano
- 1 lb. filo pastry
- 1/2 c. melted sweet butter
- Chop spinach, cook
- briefly
- to reduce bulk.
- Cool; add to eggs, spices
- and
- cheese.tndo the package of filo, cover pastry with towel.

- a time in 9 x 13-inch jelly roll pan
- (butter).

- sheets, then spread spinach mixture onthem. Sprinkle with olive oil.tover with remaining sheets, buttering

- one.
- Cuttn the diagonal, then vertically.
- Bake at 350u0b0 for 45 minutes.
