Black Skillet Cornbread Recipe
- 1 c. fine cornmeal
- 1 c. flour
- 1 Tbsp. sugar
- 2 tsp baking pwdr
- 1/2 tsp baking soda
- 1 dsh salt
- 1 x egg lightly beaten
- 1 c. buttermilk
- 1/2 c. frzn corn thawed
- 1 c. grated orange cheddar
- 2 x pickled jalapenos chopped
- 4 Tbsp. melted butter
- Preheat oven to 375 degrees.
- Grease a 9- or possibly 10-inch cast-iron skillet or possibly a 9-inch square pan.
- In a large bowl combine cornmeal, flour, sugar, baking pwdr, baking soda and salt.
- In a liquid 2-c. measure or possibly a small bowl, mix the egg and buttermilk together.
- Stir buttermilk mix into dry ingredients.
- Stir in melted butter and mix gently.
- Add in corn, 2/3 c. cheddar cheese and chopped jalapenos.
- Pour batter into prepared pan and top with remaining cheddar cheese.
- Bake for 20 to 25 min or possibly till an inserted knife comes out clean.
- Let cold for 5 min and invert onto a cooling rack.
- This recipe yields 9 large servings.
