Tasty Wilbur

  1. Preheat oven to 500 degrees.
  2. Use 2 T of olive oil to coat oven-proof pan.
  3. Combine remaining olive oil and malt vinegar.
  4. Drizzle on tenderloin.
  5. Combine spices and herbs.
  6. Press into tenderloin on all sides.
  7. Roast tenderloin (uncovered) 15 minutes.
  8. Remove from oven.
  9. Rub about butter along length of tenderloin, let set for 5 minutes to set juices.
  10. Slice and serve.
