Mary's Gingerbread Recipe
- 1/2 c. butter
- 1/2 c. dark brown sugar
- 1/2 c. molasses
- 1/2 c. honey
- 1/4 c. sherry
- 1/2 c. hot lowfat milk
- 3 c. flour
- 2 teaspoon ginger
- 1 1/2 teaspoon cinnamon
- 1 1/2 teaspoon mace
- 1 1/2 teaspoon nutmeg
- 1 teaspoon cream of tartar
- 3 Large eggs, beaten
- 1 teaspoon soda
- 2 tbsp. hot water
- 2 tbsp. orange rind, grated
- 1/4 c. orange juice
- 1 c. raisins
- Preheat oven to 350 degrees.
- Spray a 9 x 13 inch pan.
- Cream butter; add in sugar and next 4 ingredients; beat.
- Add in dry ingredients to sugar mix with Large eggs.
- Dissolve soda in water.
- Add in it and rind and juice and raisins.
- Pour in prepared pan.
- Bake for 45 to 50 min or possibly till hard in the center.
