Tuna Bean Salad
- 2 (6 ounce) cans albacore tuna, drained
- 1 (16 ounce) can garbanzo beans or 1 (16 ounce) can white beans, drained and rinsed
- 2 tomatoes (preferably Roma or Heirloom)
- 12 lemon
- 1 shallot, thinly sliced
- 1 garlic clove, minced
- 3 tablespoons olive oil
- 1 teaspoon cumin
- pepper
- In a medium bowl, add the tuna and beans but do not mix.
- Coarsely chop the tomatoes, discarding the seeds.
- Add the tomatoes, juice from the lemon half, shallot, garlic, olive oil, cumin, and pepper to the tuna and beans, mixing with a rubber spatula to keep the tuna in good-sized chunks.
- Chill and enjoy!
