Christmas Carrot Pudding

  1. Cream shortening, butter and sugar.
  2. Add eggs.
  3. In a separate bowl mix dry ingredients.
  4. Wash and dry raisins.
  5. Add the fruit and raisins to the flour mixture.
  6. In a large bowl mix the carrots, flour mixture and creamed shortening.
  7. Fill sealers 3/4 full and process in a boiling water bath for 3 hours.
  8. Makes about 5 quart jars.
