Cranberry Orange Loaves
- 1 cup Honey Maid Graham Crumbs
- 1 cup all purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 3/4 cup granulated sugar
- 1 egg, slightly beaten
- 1/3 cup oil
- 1 cup fresh or frozen cranberries, chopped
- 1/4 cup chopped pecans (optional)
- 1/2 cup raisins
- 2 large oranges, (use grated rind and juice of one orange and peel and chop the second orange) Safeway 1 lb For $0.79 thru 02/09
- COMBINE dry ingredients.
- Add egg, oil, and 1/3 cup (75mL) orange juice.
- Stir just until all ingredients are moist.
- Do not over mix.
- Immediately fold in cranberries, nuts, raisins, chopped orange and rind from orange.
- PLACE into 4 well-greased and floured 5x3x2" (13x8x5cm) loaf pans.
- BAKE at 350F (180C) for 30 to 40 minutes or until done.
- Let stand 5 minutes, remove from pans and cool.
