Mini No-Bake Cheesecake Bites
- 8 vanilla wafers
- 2/3 cup boiling water
- 1 pkg. (0.3 oz.) JELL-O Lemon Flavor Sugar Free Gelatin
- 1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened
- 1 cup thawed COOL WHIP FREE Whipped Topping
- Place 1 wafer in bottom of each of 8 foil cup-lined muffin cups; set aside.
- Add boiling water to gelatin mix in bowl; stir 2 min.
- until completely dissolved.
- Cool 5 min., stirring occasionally.
- Pour gelatin into blender.
- Add cream cheese; cover.
- Blend on medium speed 30 to 45 sec.
- or until blended.
- Add COOL WHIP; cover.
- Blend on lowest speed 5 sec.
- or just until blended.
- Pour into prepared muffin cups.
- Refrigerate 2 to 3 hours or until firm.
