Indian Ocean Gazpacho
- 14 teaspoon chili powder
- 14 teaspoon ginger
- 14 teaspoon garlic
- 14 teaspoon green chili pepper
- 12 teaspoon sugar
- 2 tablespoons yogurt, plain
- 1 teaspoon lemon juice
- 14 teaspoon mint leaf
- 1 lb cucumber, peeled
- 2 cups yogurt
- 4 garlic cloves
- 14 teaspoon salt
- Blend all the ingredients for the mint chutney until it becomes a smooth paste.
- Blend all the ingredients for the yogurt soup and keep it chilled in a refrigerator.
- To serve, transfer the yogurt soup into a chilled soup bowl.
- Garnish with mint chutney and fresh mint leaves.
