BAKER'S GERMAN'S Sweet Chocolate-Cherry Cake

  1. Heat oven to 350F.
  2. Line bottoms of 3 (9-inch) round cake pans with waxed paper; spray sides of pans with cooking spray.
  3. Microwave chocolate and water in large microwaveable bowl on HIGH 1-1/2 to 2 min.
  4. or until chocolate is almost melted, stirring after each min.
  5. Stir until chocolate is completely melted.
  6. Mix flour, baking soda and salt; set aside.
  7. Beat butter and sugar in large bowl with mixer until light and fluffy.
  8. Add egg yolks, 1 at a time, beating well after each.
  9. Blend in melted chocolate and vanilla.
  10. Add flour mixture alternately with the buttermilk, beating until blended after each addition.
  11. Beat egg whites in small bowl with mixer on high speed until stiff peaks form.
  12. Gently stir into batter.
  13. Pour evenly into prepared pans.
  14. Bake 30 min.
  15. or until toothpick inserted into centers comes out clean.
  16. Immediately run knife around sides of cakes in pans.
  17. Cool 15 min.
  18. Invert onto wire racks; gently remove pans.
  19. Remove waxed paper; discard.
  20. Cool cakes completely.
  21. Spread cherry pie filling between cake layers and onto top of cake.
  22. Sprinkle top with coconut.
