Luscious Apricot Ice Cream

  1. COMBINE the apricots, sugar and water in a saucepan, stir until sugar has dissolved, then simmer, stirring occasionally for 5 minutes or until apricots are soft.
  2. Puree then cover and chill.
  3. COMBINE the PHILLY and milk then blend or process until smooth.
  4. Add the cream and apricot puree and blend again until smooth.
  5. Freeze the mixture in an ice cream maker according to manufacturers directions.
  6. SPOON the ice cream into serving bowls or glasses, decorate with mint and serve with almond bread.
  7. Serve immediately.
  8. HANDY TIP: Turkish apricots are not suitable for this recipe as they contain added sugar which will affect the finished product.
