Luscious Apricot Ice Cream
- 200 g dried apricots, roughly chopped
- 2 cups sugar
- 1/2 cup water
- 500 g PHILADELPHIA Cream Cheese, softened
- 2 cups milk
- 1 cup pure cream
- mint sprigs, for decoration
- almond bread, to serve
- COMBINE the apricots, sugar and water in a saucepan, stir until sugar has dissolved, then simmer, stirring occasionally for 5 minutes or until apricots are soft.
- Puree then cover and chill.
- COMBINE the PHILLY and milk then blend or process until smooth.
- Add the cream and apricot puree and blend again until smooth.
- Freeze the mixture in an ice cream maker according to manufacturers directions.
- SPOON the ice cream into serving bowls or glasses, decorate with mint and serve with almond bread.
- Serve immediately.
- HANDY TIP: Turkish apricots are not suitable for this recipe as they contain added sugar which will affect the finished product.
