Smoked Ribs
- 2 baby back rib racks
- 1 cup butter
- 12 quart vinegar
- 12 cup lemon juice
- 1 (12 ounce) bottle marinade (Such as Dales, Moore's, or Allegro, Allegro is the best)
- 14 cup your favorite barbecue rub
- 10 -12 hickory wood chunks
- 1 quart water or 1 quart apple juice or 1 quart beer
- barbecue sauce
- Prepare smoker.
- Combine butter, vinegar, lemon juice, and marinade in a large pot.
- Bring to a boil on the stove.
- Drop racks of ribs into the mixture and cook until they turn brown (usually 5-10 minutes).
- Remove and let cool for 5-10 minutes.
- Rub ribs with barb-que rub of choice.
- Pour water, apple juice or beer into the water-pan.
- Put a large handful of wood chunks on-top of charcoal.
- Cook ribs for 3 1/2 hours rotating them once during those 3 1/2 hours.
- After 3 1/2 hours, put on bar-b-que sauce and cook for an additional 30 minutes.
