Tig's Unsausage and Pasta Soup
- 5 cups vegetable stock
- 1 package sausage vegetarian substitue, sliced
- 1 medium onions chopped
- 3 each scallions, spring or green onions thinly sliced
- 1 each sweet red bell peppers diced
- 2 each bay leaves
- 1/2 teaspoon lemon pepper
- 1 each serrano chiles sliced
- 1 cup pasta small shells
- 1 cup green peas frozen
- In a large pot, combine veg broth, sausage, onion, green onion, bell pepper, bay leaves, lemon pepper, and serranos.
- Simmer for 20 minutes.
- Add pasta shells and simmer another 7 to 9 minutes, until cooked tender.
- Add peas and heat to warm.
- Ladle into bowls and serve.
