Buttermilk Panna Cotta With Macerated Strawberries Recipe

  1. Soften gelatin in cool water till it is the consistency of plastic wrap (approximately 5 min).
  2. Combine cream and sugar, and bring to scald.
  3. Remove from the heat; add in softened gelatin, that has been squeezed dry of all excess water.
  4. Add in buttermilk.
  5. Pass through a fine mesh strainer.
  6. Divide among ramekins.
  7. Chill till set (approximately 4 hrs).
  8. MACERATED STRAWBERRIES:Combine strawberries and sugar and macerate for approximately 1/2 hour.
  9. Afterwards strain the strawberries, reserving the juice and macerated berries separately.
  10. Serve panna cotta topped with strawberry liquid spooned on top and with macerated strawberries.
