Lebkuchen Cookies
- 1 c. chopped walnuts
- 1/2 c. mixed glace fruit
- 1/4 tsp. grated orange peel
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. allspice
- 1/2 tsp. nutmeg
- 1 tsp. cinnamon
- 1 tsp. freeze-dried coffee
- 1/2 c. butter or margarine
- 1/4 c. packed brown sugar
- 1 egg, beaten
- 1/3 c. honey
- 1/2 c. sourdough starter
- rum glaze
- 1 3/4 c. all-purpose white flour
- Mix walnuts, fruit and orange peel. Combine flour, soda, spices and coffee.
- Sprinkle over fruit and nut mixture.
- Cream the butter and sugar until fluffy. Beat in egg.
- Add honey and sourdough starter alternately with flour and nut mixture.
- Mix well. Spread on greased jelly roll pan. Bake in preheated 375u0b0 oven for 15 minutes or until done. Remove from oven. Frost with rum glaze.
- Cool. Cut into bars.
- Yields 2 dozen cookies.
