K-Jon's Split Pea Soup
- 2 cups split peas
- 1 12 cups onions (chopped)
- 1 12 cups carrots (diced)
- 1 cup celery (diced)
- 2 quarts chicken stock or 2 quarts broth
- 1 teaspoon thyme (dried)
- 12 teaspoon oregano (dried)
- 12 teaspoon crushed red pepper
- 12 teaspoon fresh ground pepper
- 1 12 teaspoons garlic (granulated)
- 1 bay leaf
- 1 -2 ham bones, with meat (or 1-2 cups diced Ham) or 1 -2 smoked ham hock (or 1-2 cups diced Ham)
- 13 cup dry sherry
- salt and pepper
- rinse and sort Peas.
- add Stock, peas, Meat (bone), vegetables, and dry ingredients.
- bring to boil, simmer covered 2 hours.
- remove bone and trim meat.
- if not thickened, blend with hand blender.
- add trimmed meat back to soup and Sherry.
- bring back to boil and simmer 10 minutes more.
- if too thick add some water and season to taste.
- Serve with crusty bread!
