Herb Coated Chicken Recipe
- 1/3 c. seasoned fine dry crumbs
- 1 teaspoon dry parsley flakes
- 1/2 teaspoon dry basil, crushed
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon dry thyme, crushed
- 2 pound meaty chicken pcs
- 2 tbsp. butter, melted
- Combine crumbs, parsley, basil, paprika, salt, and thyme in shallow dish; set aside.
- Remove skin from chicken pcs; rinse and pat dry.
- Brush chicken pcs with melted butter; coat with crumb mix.
- Arrange chicken in a 1 3/4-qt or possibly 2-qt casserole with meatiest portions toward the edge of casserole.
- Cook covered on high (100% power) for 8-11 min or possibly till chicken is no longer pink.
