avocado gazpacho
- 6 avacados
- 1 bunch cilantro
- 1/2 jalapeno
- 1 can low sodium chicken broth
- 1 tbsp salt
- 1/2 bunch green onion
- 1/2 lime
- start by cutting avocados and add to blender with all ingredients.
- check salt level.
- your gazpacho will be soup like consistency.
- before chilling add your 1/2 lime squeezed stir & chill for 20 minutes in a plastic container.
- top with fresh sour cream & serve with bread of choice.
