Vickys Fruit Scones, Gluten, Dairy, Egg & Soy-Free
- 150 grams brown rice flour
- 50 grams buckwheat flour
- 2 tsp baking powder
- 125 grams grated apple
- 50 grams sultanas or dried cranberries
- 50 grams dairy-free spread/butter ie vitalite brand
- 8 tbsp or less rice milk
- Preheat the oven to gas 8 / 230C / 450F and line a baking sheet with parchment
- Combine the flour & baking powder in a bowl
- Cut in the butter and rub between your fingers until the flour resembles breadcrumbs
- Mix in the apple and dried fruit and form a soft dough, adding the milk as necessary
- Drop spoonfuls of the dough onto the baking sheet and bake for 10 minutes.
- Turn the trays and bake a further 8 minutes until lightly golden
- Cool on a wire rack
