Cheesy Potatoes
- 3 tablespoons butter
- 1 onion, diced
- 2 stalks celery, diced
- 4 ounces mushrooms, diced
- 12 cup flour
- 2 cups milk
- 2 cups low sodium chicken broth
- 1 12 cups sour cream
- 2 cups colby-monterey jack cheese
- 1 teaspoon Mrs. Dash table blend seasoning
- 18 teaspoon pepper
- 8 cups potatoes, diced
- Saute onion and celery in large pan in butter until nearly translucent; add mushrooms, cook through.
- Sprinkle flour over and cook about a minute to form roux.
- Add liquids and stir on low until thicken.
- Add sour cream, cheese, Mrs.Dash, pepper stir to combine and finally the potatoes.
- Put everything in crock-pot and cook 4 hours on high or until potatoes are cooked through.
