Another Pointe's Marinated Vegetable Salad With Sweet Herbs Recipe

• 1/4 c. finely-julienned carrots
• 1/4 c. thinly-sliced celery
• 1/2 c. cauliflower florets
• 1/2 c. broccoli florets
• 1/2 c. seeded, sliced hothouse cucumber
• 4 x Roma tomatoes julienned
• 1 med red onion julienned
• 1/4 c. julienned red bell pepper
• 1/4 c. julienned green bell pepper
• 1/4 c. julienned yellow bell pepper
• 1 c. peas Citrus Vinaigrette (see recipe) Butter lettuce leaves for serving

1. Combine all ingredients in a large bowl and toss with Citrus Vinaigrette dressing.
2. Chill for at least 1 hour, then serve on a bed of butter lettuce.
