Martha Washington's Custard Recipe
- 3 c. lowfat milk
- 1 bay leaf
- 1 (3 inch) cinnamon stick
- 3 Large eggs
- 3 egg yolks
- 1/2 c. sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon grnd nutmeg
- 1/8 teaspoon salt
- Scald lowfat milk with bay leaf and cinnamon stick.
- In a bowl, thoroughly combine Large eggs with egg yolks, sugar, vanilla, nutmeg, and salt.
- Strain lowfat milk over egg mix and pour into small glass dishes or possibly casserole.
- Bake these in a pan with water in it.
- Test custard with knife.
- It is better to undercook then over cook, 40 to 50 min in 325 degree oven should be about right.
- This custard can have raisins and cooked rice added to it.
- If a pie is desired, use a partially cooked pie shell.
