Zucchini Boats

  1. Slice zucchini in half long and clean out the seeds and soft insides with a spoon - leaving a shell at least 1/2 inch thick on all sides.
  2. They will look like canoes when cleaned.
  3. Chop the seeds, etc., and mix well with feta, onion, dried spices, and olive oil, leaving salsa-sized chunks of feta.
  4. You may use a food processor but be sure not to over-mix as this creates an unpleasant consistency.
  5. Coat both sides of zucchini with butter-flavored no-stick cooking spray (like Pam).
  6. Spoon the mixture into the zucchini shells and place directly on the grill - medium heat.
  7. Grill for about 12 minutes or until the shells are tender.
  8. For presentation you may garnish with fresh herbs.
