Zucchini Boats
- 2 medium zucchini
- 14 cup crumbled feta cheese
- 14 cup chopped sweet onion (vidalia or maui are best!)
- 1 teaspoon dried mixed spice (garlic powder, oregano, basil, black pepper, and thyme)
- 34 teaspoon olive oil
- Slice zucchini in half long and clean out the seeds and soft insides with a spoon - leaving a shell at least 1/2 inch thick on all sides.
- They will look like canoes when cleaned.
- Chop the seeds, etc., and mix well with feta, onion, dried spices, and olive oil, leaving salsa-sized chunks of feta.
- You may use a food processor but be sure not to over-mix as this creates an unpleasant consistency.
- Coat both sides of zucchini with butter-flavored no-stick cooking spray (like Pam).
- Spoon the mixture into the zucchini shells and place directly on the grill - medium heat.
- Grill for about 12 minutes or until the shells are tender.
- For presentation you may garnish with fresh herbs.
