Spaghetti with Spinach and Olive Oil
- 3 Tablespoons Extra Virgin Olive Oil
- 4 cloves Garlic, Minced
- 1 pound Spaghetti, Cooked Al Dente
- 2 cups Baby Spinach Leaves, Sliced
- 1/4 cups Pine Nuts, Toasted
- 1 teaspoon Kosher Salt, Or More To Taste
- 1 teaspoon Fresh Ground Black Pepper, Or More To Taste
- 1/4 cups Aged Cheese, Shaved (Parmesan, Locatelli, Etc)
- Heat olive oil in a large skillet over medium heat.
- Add garlic cloves and cook just until fragrant, about 2 minutes.
- Add pasta, spinach and pine nuts.
- Using tongs, toss the ingredients just until heated, about 2-3 minutes.
- Add salt and a generous amount of fresh ground black pepper.
- Serve topped with fresh shaved cheese.
