Emeril's Blue Cheese Waldorf Salad

  1. In a bowl, whisk together the mayonnaise and vinegar.
  2. Slowly add 1/3 cup buttermilk, whisking to thicken.
  3. Add the blue cheese, onion, salt, pepper, and cayenne, and whisk well to combine, adding more buttermilk, as desired.
  4. Set aside.
  5. In a large bowl, combine the apples, celery, grapes, and walnuts.
  6. Add the dressing, to taste, and toss well.
  7. Arrange the lettuce leaves on 6 salad plates.
  8. Top with the tossed salad and serve.
