Vegetarian Broccoli Casserole

  1. Prepare the rice according to the package directions.
  2. Preheat the oven to 350F.
  3. Saute the onion (I like to use spray butter so there is no calories).
  4. Steam the broccoli until it is bright green, but not completly done (about 5 minutes).
  5. Put the can of soup in a large mixing bowl, throw in the onions, throw in the cheese... when rice is finished, add to mixture and stir until it's a big gummy ball of goopy goodness.
  6. :) Remove broccoli from steam, and fold into the goop mixture.
  7. Put it into a casserole dish and pop it in the oven for about 20-25 minutes.
  8. Enjoy!
