Vegetarian Broccoli Casserole
- 1 cup uncooked long grain white rice
- 1 can condensed cream of mushroom soup
- 1 cup grated chedder cheese
- 1/4 white
- yellow onion, chopped
- 1/2 to 1 lb. fresh broccoli (more
- less depending on your taste)
- Prepare the rice according to the package directions.
- Preheat the oven to 350F.
- Saute the onion (I like to use spray butter so there is no calories).
- Steam the broccoli until it is bright green, but not completly done (about 5 minutes).
- Put the can of soup in a large mixing bowl, throw in the onions, throw in the cheese... when rice is finished, add to mixture and stir until it's a big gummy ball of goopy goodness.
- :) Remove broccoli from steam, and fold into the goop mixture.
- Put it into a casserole dish and pop it in the oven for about 20-25 minutes.
