Rotini Salad Nicoise (Light)

  1. Cook pasta to al dente, according to package directions, drain and rinse under cold water.
  2. Set aside.
  3. Cook beans gently in boiling water until tender-crisp, about 3-5 minutes, and drain.
  4. Combine all salad ingredients in a large bowl.
  5. Whisk together the dressing ingredients.
  6. Note: The dressing will not hold together as there is no emulsifying ingredient such as mustard.
  7. Pour dressing over salad, tossing to coat evenly.
  8. Add salt and pepper to taste.
  9. If making ahead, check for salt and pepper again before serving.
