Tropical Shrimp Salad
- 1/4 c. canned coconut milk
- 1/4 c. orange juice
- 1 tbsp. sugar
- 1 tbsp. jalapeno pepper sauce
- 1 jalapeno pepper
- 3/4 lb. cooked peeled shrimp
- 2 scallions
- 1 c. Texmati or white rice
- 1 can mandarin orange segments
- 1 can pineapple chunks
- Combine dressing ingredients.
- Stir shrimp, scallions, and dressing into rice.
- Gently toss in oranges and pineapple.
- Serve on lettuce leaves.
