Pineapple-Ham Barbecue over Rice for 2

  1. Brown meat lightly in hot oil in skillet.
  2. Drain pineapple, reserving syrup.
  3. Stir syrup and barbecue sauce into browned meat.
  4. Cover; simmer 10 minutes.
  5. Blend cornstarch with 1/3 cup cold water.
  6. Stir into meat.
  7. Cook and stir till thickened and bubbly.
  8. Add the pineapple and the green pepper.
  9. Heat through.
  10. Serve over rice.
