Kachumber

  1. Chop the onion, cucumber and coriander and put them in a bowl.
  2. If you are using chile, seed and chop it and add too
  3. Plunge the tomatoes in boiling water for 30 seconds to loosen the skin
  4. While they are in the water squeese the lemon juice over the other ingredients
  5. Peel the tomatoes with your fingers and chop (usually kachumber recipes recommend seeding the tomatoes, but I never do)
  6. Add the tomatoes to the salad.
  7. Stir well, add salt and pepper, stir again and leave to sit for half an hour before serving.
  8. Enjoy!
