Green-Olive Couscous
- 3 c. reduced-sodium chicken broth
- 2 tbsp. extra-virgin olive oil
- 1/4 tsp. kosher salt
- 1/4 tsp. Pepper
- 1 1/2 c. couscous
- 1/2 c. pitted green olives
- 2 tbsp. chopped fresh thyme
- In a medium saucepan, bring broth to a boil.
- Remove pan from heat; stir in oil, salt, and pepper.
- Stir in couscous, olives, and thyme; cover and let stand 5 minutes, or until couscous is tender and liquid is absorbed.
- Fluff couscous with a fork.
