Pineapple Filling Recipe

  1. Combine sugar and cornstarch in heavy saucepan.
  2. Stir in pineapple juice liquid removed from pineapple.
  3. Cook till clear and thickened, stirring often.
  4. Remove from heat; add in lemon juice and pineapple; cold.
  5. Makes sufficient filling for a 2-layer cake or possibly double for 3 layers and sides.
