Venetian Dream

  1. BEAT egg yolks and 1/4 cup (50mL) sugar until thick, about 5 minutes.
  2. Beat in cheeses.
  3. Layer half the mixture into a 6 cup (1.5L) loaf pan or heatpoof dish.
  4. Arrange 18 vanilla wafers on top of the cheese layer.
  5. Sprinkle with liqueur.
  6. Top with remaining cheese mixture.
  7. Coarsely crush remaining six wafers and sprinkle over top.
  8. WHIP egg whites until frothy, gradually add remaining 1/4 cup (50mL) sugar, beating until stiff peaks form.
  9. Spread on top.
  10. Broil until golden brown.
  11. Refrigerate 2 hours or overnight and serve cold.
