Mediterranean Chicken
- 1 12 lbs chicken breasts
- 2 large tomatoes, coarsely chopped
- 14 cup olive oil
- 4 cloves garlic, chopped
- 12 teaspoon salt
- 12 teaspoon pepper
- 14 teaspoon oregano
- 34 cup feta cheese
- 1 lb lemon-pepper linguine or 1 lb orzo pasta
- Preheat oven to 425.
- Boil large pot of water.
- In baking dish, mix chicken, tomato, olive oil, garlic, salt, pepper, and oregano.
- Bake chicken dish 8 minutes.
- Cook pasta.
- Remove from oven and stir.
- Cook 3-5 more minutes.
- Serve over pasta.
