Sparkling Candied Grapefruit Peel
- 1 whole grapefruit Grapefruit peel
- 1 same weight as the peel Sugar
- 1 half the weight of the peel Water
- 1 optional Granulated sugar for finishing
- Wash the grapefruit by rubbing with salt.
- Rinse with water.
- (This is to remove any anti-mold agents.)
- Peel the grapefruit together with white pith.
- (The white pith wasn't bitter at all when cooked.
- It's your choice.)
- Julienne the peel.
- Weigh the peel here.
- Put the peel from Step 3 in a pot and add plenty of water (not listed).
- Turn the heat on.
- Change the water when it boils.
- Repeat 3 times.
- This will eliminate the bitterness.
- Put the peel from Step 5, sugar and water in a pot, bring to a boil and simmer for about 30 minutes.
- Turn off the heat once the peel becomes translucent and a syrup forms.
- Drain the excess juice, and place the peel on a baking sheet.
- Dry in a 210F/100C oven for 30 minutes.
- Sprinkle with granulated sugar while it's still hot.
- You're all done!
