Sparkling Candied Grapefruit Peel

  1. Wash the grapefruit by rubbing with salt.
  2. Rinse with water.
  3. (This is to remove any anti-mold agents.)
  4. Peel the grapefruit together with white pith.
  5. (The white pith wasn't bitter at all when cooked.
  6. It's your choice.)
  7. Julienne the peel.
  8. Weigh the peel here.
  9. Put the peel from Step 3 in a pot and add plenty of water (not listed).
  10. Turn the heat on.
  11. Change the water when it boils.
  12. Repeat 3 times.
  13. This will eliminate the bitterness.
  14. Put the peel from Step 5, sugar and water in a pot, bring to a boil and simmer for about 30 minutes.
  15. Turn off the heat once the peel becomes translucent and a syrup forms.
  16. Drain the excess juice, and place the peel on a baking sheet.
  17. Dry in a 210F/100C oven for 30 minutes.
  18. Sprinkle with granulated sugar while it's still hot.
  19. You're all done!
