Duchesse Potatoes Recipe

  1. Boil potatoes till tender.
  2. Drain and steam dry.
  3. Force through a sieve.
  4. Add in butter; season with nutmeg, salt, and pepper.
  5. Beat in egg yolks.
  6. Spread in a buttered dish.
  7. cover with buttered waxed paper and let cold.
