Duchesse Potatoes Recipe
- 3 lbs. potatoes
- 6 tbsp. butter
- 3 egg yolks
- Boil potatoes till tender.
- Drain and steam dry.
- Force through a sieve.
- Add in butter; season with nutmeg, salt, and pepper.
- Beat in egg yolks.
- Spread in a buttered dish.
- cover with buttered waxed paper and let cold.
