Madras Chicken Buns

  1. In a small bowl, combine sour cream or yogurt and chutney until well blended; set aside.
  2. In a skillet, melt butter or margarine over medium heat.
  3. Add onion, bell pepper, celery, and apple.
  4. Cook until onion is soft but not browned.
  5. Stir in curry powder; cook one minute.
  6. Add chicken, and cook for 3 minutes or until heated through.
  7. Stir in sour cream mix; cook for 1 minute.
  8. Remove skillet from heat, but keep warm.
  9. Toast buns.
  10. Spoon 1/2 cup of mixture onto each bun.
  11. Makes 4 sandwiches.
  12. Note: I prefer to serve this over hot cooked egg noodles or fettuccine.
