Simple Braised Leeks

  1. Pat leeks dry and place in slow cooker.
  2. Add butter and toss well.
  3. Place a clean towel, folded in half over top of cooker to absorb moisture.
  4. Cover and cook on high 1 hour.
  5. Stir well.
  6. Remove tea towel and add stock.
  7. Cover and cook on low for 5-6 hours, until leeks are tender.
  8. Season with salt and pepper to taste.
  9. Garnish with parsley and serve.
