My Pork, Apple & Mustard Fritters
- 1 1/2 pints Vegetable oil
- 400 grams pork tenderloin /i use tender as it cooks quickly and is tender.
- 4 small Apples peeled and cored
- 3 small Sweet Peppers chopped small
- 2 tbsp Dijon Mustard
- 1 pints water to add to the batter mix.
- Chop pork into small cubes, fry until the red has gon about 3--5 minutes, then remove and drain on kitchen paper
- Chop small the Peppers.and the apples peeled and cored into small pieces
- Make your Batter, or buy ready made, dont put the specified amount of water in, you need the battermix thick.
- Add the pork, apple and peppers to the battermix.
- Mix all in
- Add the Mustard, and mix in well.
- If your mix is runny you can more batter mix and stir to make it thicker.
- The mix should resemble this, feels heavy on the spoon.
- Heat veg oil until really hot, test with a small peice of bread if it bubbles and browns its ready.
- Must be at leased 3 inches depth, so as the nuggets float .
- Use a spoon and spoon up a tablespoon of the mix making sure you have a piece of pork in each dollop, then drop into the oil carefully, just 2 or 3 at a time
- using a slotted spoon, turn them over fry for about 3 minutes , take out and drain.
- Makes between 20--24 in between adding the friitters scoop out all the bits after you have done about 4, and that will bring it back to the right heat, leave a minute between each batch.
- Serve with a nice sweet salad
