Microwave Risotto Chicken
- 1 cup onion
- 2 teaspoons olive oil
- 1 cup celery
- 4 ounces arborio rice
- 1 14 cups fat-free chicken broth
- 10 ounces lean ground turkey
- 12 teaspoon dried tarragon
- 12 teaspoon table salt
- 18 teaspoon black pepper
- In a 2-quart microwave-safe casserole, combine onion and oil, microwave for 2 minutes.
- Add rice and microwave for 1 minute.
- Add broth microwave for 6 minutes.
- Stir in chopped celery, ground chicken, and spices.
- Microwave for 8 minutes or until chicken is no longer pink.
- Remove casserole from microwave and let stand covered for 10 minutes until liquid is absorbed.
- Test to make sure rice is cooked.
