Cheesy Zucchini Casserole
- 8 zucchini (2 lb.), sliced
- 1 onion, chopped
- 1 cup sliced fresh mushrooms
- 1 clove garlic, minced
- 2 Tbsp. oil
- 1 container (16 oz.) BREAKSTONE'S or KNUDSEN Cottage Cheese
- 3 eggs
- 2 Tbsp. flour
- 2 Tbsp. Italian seasoning
- 1 pkg. (8 oz.) KRAFT Shredded Sharp Cheddar Cheese
- Heat oven to 350F.
- Cook and stir zucchini, onions, mushrooms and garlic in hot oil in large skillet on medium-high heat 5 min.
- Drain in colander; set aside.
- Whisk eggs, flour and seasoning in large bowl until blended.
- Add vegetables and cheese; mix well.
- Pour into 12x8-inch baking dish sprayed with cooking spray.
- Bake 45 min.
- or until knife inserted in center comes out clean.
