Spicy Turkey Mix
- 4 cups shredded cooked turkey breast
- 1/2 cup red, green or yellow sweet peppers, diced
- 1/2 cup drained chopped canned tomatoes
- 1/4 to 1/2 cup hot sauce
- 1/4 cup honey
- 1 tablespoon crushed red-pepper relish
- 1/2 cup fresh chopped cilantro
- 8 8-inch whole-wheat tortillas
- Place the turkey in a cast-iron skillet over medium-low heat.
- Add the fresh peppers, and saute, stirring constantly for 10 minutes.
- Add the tomatoes, hot sauce, honey, relish and cilantro, and cook an additional 10 to 20 minutes.
- Serve wrapped in tortillas.
