Homemade Granola Oatmeal Bars
- 2 cups rolled oats
- 1 cup flour (I use whole wheat)
- 34 cup light brown sugar
- 34 cup seedless raisin
- 12 cup wheat germ
- 12 teaspoon salt
- 12 teaspoon cinnamon
- 12 cup chopped nuts (almonds, peanuts, walnuts)
- 12 cup canola oil
- 12 cup honey
- 1 egg
- 2 teaspoons vanilla
- Mix all dry ingredients (first 8) in a large bowl.
- In a separate medium bowl, mix the wet ingredients well.
- Add wet ingredients to dry and mix well.
- May add a little water (1-2 Tbsp.)
- to help finish mixture.
- (do not add water too early in mixing) Line a 9x13 pan with parchment paper, and spray paper with oil.
- Leave a couple of inches of paper overhanging on all 4 sides.
- Add mixture on top of the paper and with a large spoon, press firmly into corners and all over the top.
- Make sure mixture is pressed down firmly.
- Bake at 350 degrees F for approx 30 minutes.
- Let cool COMPLETELY.
- After cooled, lift the mixture by the paper carefully and transfer to a cutting board.
- Cut into approximately 16-18 bars.
- Wrap in celophane and store in refrigerator.
