Yummy Meatballs and Pasta
- 250 g pork mince
- 250 g beef mince
- 1 egg
- 2 tablespoons grated parmesan cheese
- 1 garlic clove
- 1 teaspoon oregano (dried)
- 3 tablespoons semolina or 3 tablespoons breadcrumbs
- lashings ground black pepper
- 1 teaspoon salt
- 1 onion
- 2 garlic cloves
- 1 teaspoon oregano (dried)
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 700 g tomato passata
- 350 ml water
- 1 pinch sugar
- salt & pepper
- 100 ml whole milk
- Start the sauce first.
- Put the onion, garlic and oregano into the food processor and blitz until very finely chopped.
- Heat the butter and oil in deep pan and add the onion mix.
- Cook over a low heat for 10 minutes or so until soft.
- Add the passata and water to the pan with the sugar, salt and pepper and leave to simmer for 10 minutes while you make the meatballs.
- Put all the meatball ingredients into a bowl and mix together using your hands.
- Shape into small balls (around a heaped teaspoon each).
- Add the milk to the sauce and then drop the meatballs inches.
- Don't stir them until they've turned brown.
- Cook for 20 minutes, check the seasoning and serve over pasta.
