Pear and Chocolate Butter

  1. Put a small plate in your freezer.
  2. Pour the lemon juice in a bowl.
  3. Peel and core the pears.
  4. Dice them and mix the pieces in the bowl with the lemon juice.
  5. In a large saucepan mix the pears and sugar and bring to a boil under medium high heat.
  6. Cook for 20 to 30 minutes, stirring occasionally and foaming if necessary.
  7. To check if it is set, pour a little jam on your cold plate.
  8. Wait for a few second and see if it doesnt run, it is set, otherwise, keep on cooking and try again a few minutes later.
  9. Stir the chocolate into the jam, wait for a simmer then turn the heat off.
  10. Ladle into jars leaving a 1/4 headspace.
  11. Process for 10 minutes in a boiling water bath.
  12. Adjust time according to altitude.
