Raspberry Peach Dessert

  1. Stir 3/4 cup of the boiling water into 1 pkg.
  2. of the dry gelatin mix in medium bowl at least 2 minutes until completely dissolved.
  3. Refrigerate about 1 hour or until slightly thickened.
  4. Add whipped topping, sour cream and raspberries; stir until well blended.
  5. Pour into 1-1/2-quart serving bowl.
  6. Refrigerate about 2 hours or until set but not firm.
  7. Stir remaining 3/4 cup boiling water into remaining pkg.
  8. of dry gelatin mix in small bowl at least 2 minutes until completely dissolved.
  9. Add enough ice cubes to cold water to measure 1 cup.
  10. Add to gelatin; stir until ice is completely melted.
  11. Refrigerate about 1 hour or until slightly thickened (consistency of unbeaten egg whites).
  12. Reserve several peach slices for garnish.
  13. Chop remaining peaches; stir into thickened gelatin.
  14. Spoon over creamy layer.
  15. Refrigerate 3 hours or until firm.
  16. Top with reserved peach slices.
  17. Garnish with mint leaves, if desired.
