Sausage and Kale Rice Bowl for One
- 1 cup Cooked Brown Rice
- 1- 1/2 teaspoon Olive Oil, Divided
- 3 ounces, weight Vegan Sausage Link, Cut Into Bite-size Thin Pieces
- 1/2 cups Finely Diced Sweet Onions
- 2 cloves Garlic, Minced
- 1- 1/2 cup Kale, Chopped And White Parts Removed
- 18 teaspoons Ground Sea Salt
- 18 teaspoons Freshly Ground Black Pepper
- 18 teaspoons Cayenne Pepper, Or To Taste
- In a medium bowl, add warm cooked brown rice.
- In a large skillet, heat 1 teaspoon olive oil over medium heat and spread around the pan.
- Add sausage and cook for 34 minutes on each side, turning once, until browned.
- Add the onions and garlic and cook for 23 more minutes, stirring occasionally.
- Remove from heat and add the onion/sausage mix to the rice.
- In the same skillet over medium heat, add the chopped kale and remaining 1/2 teaspoon olive oil.
- Stir and cook for 2 minutes, or until kale starts to wilt.
- Remove from heat and add the kale to the brown rice mixture.
- Then add all seasonings and stir until combined.
- Makes about 2 cups.
