Sausage and Kale Rice Bowl for One

  1. In a medium bowl, add warm cooked brown rice.
  2. In a large skillet, heat 1 teaspoon olive oil over medium heat and spread around the pan.
  3. Add sausage and cook for 34 minutes on each side, turning once, until browned.
  4. Add the onions and garlic and cook for 23 more minutes, stirring occasionally.
  5. Remove from heat and add the onion/sausage mix to the rice.
  6. In the same skillet over medium heat, add the chopped kale and remaining 1/2 teaspoon olive oil.
  7. Stir and cook for 2 minutes, or until kale starts to wilt.
  8. Remove from heat and add the kale to the brown rice mixture.
  9. Then add all seasonings and stir until combined.
  10. Makes about 2 cups.
